What You’ll Need

How much coffee?

50g for 700ml

NOTE: The amount of coffee to water varies depending on the type of coffee you are brewing and your preferred strength.

Step 1 – Grind

Grind the coffee to a medium course grind size – you’re looking for it to have the consistency of sea salt.

Step 2 – Prep

Place the filter in the Chemex, ensuring that the triple-fold portion is facing the pour spout.
Rinse the filter with hot water and allow it to drain completely, then discard the water.
This preheats the brewer and gets rid of any paper flavor from the filter.

Step 3 – Add Coffee

Pour the ground coffee into the center of the filter and give it a gentle shake. This will flatten the bed, allowing for a more-even pour.

Step 4 – Start

Start the timer.
Starting at the bed’s center, gently pour twice the amount of water that you have coffee into your grounds (for example, 50 grams of water if you have 25 grams of coffee). Work your way gently outward, and avoid pouring down the sides of the filter. You’ll notice that adding this amount of water causes the coffee to expand, or “bloom.” Allow to bloom for about 30 seconds.

Step 5 – Add more water

Pour in the remainder of the water in the same spiral motion.
Allow the water to drip through the grounds until the slurry drops 1 inch from the bottom of the filter.

Step 6 – Brew

Let it Brew.
Once the brewing is complete, remove the filter and pour your coffee.

Step 7 – Drink
